A budget-friendly recipe that is a nourishing, flavourful Zimbabwean favourite. Perfect for the winter months! Ingredients • 6-8 pieces of Sable chicken (mixed cuts like thighs, drumsticks, necks, or backs) • 1 bunch of pumpkin leaves, washed and chopped • 1 onion, chopped • 2 ripe tomatoes, chopped • 2 cloves garlic, minced • 1 tablespoon cooking oil or chicken fat • 1 tablespoon peanut butter (optional but adds richness) • Salt and pepper to taste • A little water or chicken stock Method 1. In a pot, add chicken pieces with a pinch of salt, a bit of garlic, and just enough water to cover. Simmer until cooked and tender (about 25–30 minutes). Reserve the broth. 2. In a separate pot, heat oil and fry the onions until soft. Add the tomatoes and remaining garlic and cook until the tomatoes break down. 3. Add the cooked chicken pieces into the tomato mixture. Stir to coat well and fry for a few minutes to absorb the flavour. 4. Add the chopped pumpkin leaves. Stir, cover, and allow them to cook down. If the mixture is dry, add a splash of chicken stock or water. 5. Stir in a spoonful of peanut butter and let it melt into the dish. Simmer gently until the sauce is well combined and the leaves are soft (about 5–10 minutes). 6. Taste and adjust salt and seasoning. 7.
