SAVE FOR LATER | Coconut Curry Lamb Chops
Ingredients: 4 lamb chops, 2tbsp Golden Fry Vegetable Oil, tbsp unsalted butter, salt and pepper
For the sauce: 1 medium onion chopped, 2 garlic cloves, crushed, 1tsp ginger, crushed, 2 medium tomatoes, blended, ½ cup coconut cream, 1tbsp curry powder, 1tsp garam masala, 1 cup water, salt and pepper to taste
Step-by-step:✨Season the lamb chops with salt and pepper ✨In a pan over medium heat, add Golden Fry Oil to melt the butter, add the lamb chops and cook both sides for about 8 mins or until well browned. Remove from the pan and set aside.✨In the same pan add onions, cook for until soft, add garlic and ginger, stir well to combine, add the blended tomatoes. Let it cook until the sauce thickens✨Add coconut cream, water, curry powder, garam masala, salt, pepper, stir well then add the lamb chops. Cover and let it cook on medium-low heat for 5 mins Serve garnished with fresh coriander leaves.
